Seasonal Table
The Midsummer Fish Supper
Sun-drenched, low-effort luxury inspired by Alison Roman's effortless, acidic table.
A summer supper with no hurry.
Cooking fish for a group normally terrifies people because of the risk of overcooking. Alison Roman's genius trick—slow-roasting salmon submerged in gentle olive oil and citrus wheels—makes it virtually impossible to dry out. Surrounded by an herby heirloom tomato tart, crisp wedges with sour cream dressing, and an unfussy chocolate cake, this is the ultimate "I threw this together, no big deal" dinner party.
Before the doorbell
- Early Afternoon
- Bake the tomato tart and chocolate cake. Both are happiest at room temperature.
- 45 Minutes Before
- Slide the salmon into a low 300°F oven. It stays juicy and glistening even if it rests for 20 minutes before serving.
- At Service
- Platter the salmon with fresh herbs; dress the wedges; open a crisp mineral white wine.
